![]() Being gluten intolerant as well as allergic to dairy, soy, peanuts and shrimp I am being challenged to find tasty dishes for our table. After several attempts using packaged mixes and numerous recipes from books and the web, I find that most things are tasteless, dry and unappetizing. Please note that any recipe or comment on this website is for information only. No guarantees or claims are made for any reason. Gluten free/Lactose free Fruit Cake Bars1 pkg Glutino brand white cake mix 2 eggs 1 Tsp Pure Vanilla 1/2 cup canola oil 1/2 cup rice milk 1 small pkg chopped Hazelnuts (approx. 1/2 cup) 1/2 cup chopped pecans 1/2 container of candied red cherries, cut in halves 1/2 container of candied green cherries, cut in halves 4 ounce container of chopped fruits and peel 4 ounce container of chopped candied pineapple Preheat oven 350 degrees Combine first 7 ingredients. Add the next 4 ingredients folding in the fruits. Spray a 9 x 13 inch pan with a canola or similar spray then add the cake mixture. Bake 45 - 50 minutes or more depending on your oven. Allow to cool and cut into bars. Makes 1 dozen large bars Gluten free/ Lactose free Pecan Pie preheat oven to 400 degrees 3/4 cup all purpose gluten free flour 1/4 cup tapioca flour 1/2 cup organic shortening 1 tsp salt 4 - 8 Tbsp ice water (Use your best judgement because gluten free flours absorb more liquid) Combine above ingredients. Press evenly into an 9 inch pie pan. (The dough will not be the same as wheat gluten crust and cannot be rolled out with a rolling pin) Combine the following ingredients for the filling: 4 large eggs 1/4 cup coconut oil - melted but not hot 1 Tablespoon Pure Vanilla 1 Tablespoon Tapioca flour 1 1/4 cup Dark Corn Syrup Fill the crust carefully with the filling mixture. Bake at 400 degrees for 50 minutes Breading for Fried Fish 1 cup gluten free all purpose flour 1 cup ground Hazelnuts 1 Tbs Garlic powder 1 Tbs Sea Salt 1 Tsp Celery powder or salt 1 Tsp white pepper 1 Tsp Chili powder Combine all ingredients in a zippered plastic bag Next beat 1 large egg per each pound of filets. Coat each filet with egg then add one at a time to the coating bag. Coat each filet then put in a deep fryer until golden brown. You may also pan fry using Olive Oil, Canola or Safflower oil.
